Sift together the flour, baking powder, baking soda, ginger; set aside.
In a medium bowl, mix butter and sugar; then add honey and egg - until smooth. Gradually stir in the dry ingredients, until they are completely absorbed. Divide dough into 2 pieces, pat down to 1 ½ inch thickness, wrap in plastic wrap and refrigerate overnight - if you can’t, leave it to rest for at least 3 hours.
Preheat oven to 180 degrees C (350 degrees F).

I like to roll the dough between two eerm… cable raceway covers (my dad gave me those, they’re exactly 5mm thick as I wanted) for even thickness and sandwiched between two pieces of parchment. This yields a perfectly even sheet of dough for cutting - and your hands are clean 😏
Roll the dough out, cut into desired shapes with cookie cutters, and place cookies about 1 inch apart onto an ungreased cookie sheet.
Then I remembered I ordered these Star Wars cookie cutters for @titled-un ‘s birthday and still haven’t tried them - why not now. Everyone’s talking about SW now anyway.

I know cutters like these are usually used for fondant, but I like how these turned out :)
